Domaine Raspail-Ay

Descendant of the family Raspail from Gigondas (Eugène), Dominique Ay works at present the 18 hectares of vineyards which compose the domain since 5 generations (1850).

The plots of land are of a single upholder and surround the wine cellar, themselve situated in the entrance of Gigondas below the natural barrier which constitute the Dentelles of Montmirail. The ground is of argilo-calcareous type East-west exposure, in the service of the structuring vines of the naming (grenache noir, syrah and mourvèdre) 45-year-old on average. In the cropping tradition of the domain, adapted in the course of time to the remarkable natural conditions, the wine stemming from the property is exclusively in AOC Gigondas (red and rosé) in the service of the expression of the terroir.

The grape is hand-picked, sorted out then égrappé to ferment during long macération (approximately 1 month) in the family tanks. The wine is then brought up between 18 and 24 months in old tanks of oak, volumes from 40 to 130 hectolitres. It is thus 2 years after the vintage that red Gigondas of the Domaine Raspail-Ay is available for the tasting. Of a nose of scrubland and a dress ruby, the balance in mouth is situated between a structure of cooked fruits or spices and a sharpness of tannins. The wine can be consumed 3 or 4 years later (and according to) the year until 15 to see 20 years according to the preferences.
