Domaine de Fontavin
Wine grower
The vines in Gigondas of the "Domaine de Fontavin" are located in the Dentelles de Montmirail at 400 meters of altitude (locality called "Combe Sauvage".
The grapes are Grenache (75%) and a blend of Mourvèdre, Cinsault, syrah, clairette rose (25 %).
The vines are 50 years old. The yield is low : 25 Hl / hectare.
The harvest is made by hand. The grapes are destemmed. The duration of the marceration is 3 weeks. Punching down the cap gives better extraction.
The ageing is 15 month in vat.

The Domaine de Fontavin is a family estate of 40 hectares of vines located in Courthézon. The vineyard covers 6 differents villages.
The particularities ?
- Only women in the wine cellar ! "Agathe" is the winemaker and Hélène Chouvet is the owner and oenologist.
- In the vineyard of Fontavin it is the begining of organic farming since april 2008.
